32 Keebler® Chips Deluxe® Oatmeal cookies (divided)
1/3 cup butter or margarine, melted
3 packages (8 oz. each) cream cheese, softened
2/3 cup sugar
6 squares (1 oz. each) semi-sweet chocolate, melted and cooled
2 teaspoons vanilla
1. Coarsely chop 6 of the KEEBLER CHIPS DELUXE Oatmeal cookies. Set aside. Place the remaining 26 cookies in food processor bowl. Cover and process until fine crumbs form. In small bowl toss together cookie crumbs and butter. Press on bottom of 13 x 9 x 2-inch baking pan. Bake at 350° F for 10 minutes.
2. Meanwhile, in large mixing bowl beat cream cheese on medium speed of electric mixer until fluffy. Add sugar, chocolate and vanilla. Beat until combined. Add eggs, one at a time, beating until just combined after each addition. Pour over hot crust. Sprinkle with chopped cookies.
3. Bake at 350° F for 20 to 23 minutes more or until almost set. Cool on wire rack for 1 hour. Refrigerate at least 2 hours. Cut into squares
